I can't recall any specific instances, but I think it has happened. With some sitcom that I don't remember.
I can only think of "Family Guy", but that was cancelled and picked up later on. Doesn't quite fit the category, but it's the closest I can think of.
An actual advertised series finale, then picked up later on? Can't think of one at all.
