Monday has always been boosted by giveaway spillover, so with the added benefit of the holidays, it'll be Demon Slayer's biggest weekday until perhaps Friday (New Year).
As for this week in general: Most films doubled/tripled their weekend gross this week back in 2015, the last year that Christmas and New Year landed on a Friday, so something similar should occur this year. But this excludes Demon Slayer since it's not operating like any other film before it. It's up over an unprecedented 100% this weekend (a weekend where nothing ever really increases 1%), before the holidays really even start due to the last giveaway event, so its weekdays aren't going to be as strong percentage-wise as a lot of that business was moved to this weekend. And Demon Slayer will be down next weekend, where most films will be up. You don't increase again after a 100%+ weekend increase.
I'm also not projecting anything this week, or the next. The holidays are hard to predict, with every film behaving differently, and it's not as simple as assigning a 10-30% increase or something to most films when some films (very adult-driven ones) will actually be down this week despite the holidays (their audience still work this week), while some films might be up 300 or 400% or more. You can't accurately project the holidays in advance. A day or two ahead, you may get a rough idea, but certainly not days out.
Also, I always post Weekday Estimates during holiday periods, so look forward to those.

The last time this happened, back in 2015/2016, everything started to drop 50%+ from January 5th onward since the holidays had ended. I don't think the drops will be quite as high this time since New Year has been extended a week, but the week will still be down a good bit. 30-40% sounds fine on paper, but we need to take this on a day-to-day basis, versus week-to-week basis.
That's generally speaking. Demon Slayer isn't a general film, and could continue to behave abnormally.

We've never had an extended New Year before, so who knows. Everything could drop 1% or 99%.
30-40% is just a guess. This upcoming week is going to be inflated, even beyond the typical holiday boost, due to how the dates lined up this year. The last time this happened (2015), most films dropped 50-60% from January 5th onward. That should be "expected", but I wouldn't expect that this year due to the extended holiday period, and would look for something around half of that as an early rough, possibly in the ballpark range of a projection.
The extended New Year isn't really a holiday. There are no holidays over it. It's intended to help avoid travel congestion due to COVID concerns, so the benefit could be a lot smaller than we may expect since people are going to spread out their travel time.
We need to actually wait and see how everything performs before then, and then at the start of next week, rather trying to predict it over a week out. We don't even know the weekend numbers from this weekend yet. Trying to predict something two weeks out using numbers we don't know from the week(s) prior isn't going to be worth much. Rushing to get to the finish isn't very fun either.

Additionally I believe DS got enough publicity during its run and most people know that it was going to break the record. I'm sure there will be a few by standers who would get interested. Also that it's not only the highest grossing movies but it's also one of the highest attended movies of all time in the market there wouldn't be too many people who haven't watched it by now.

Talking about the most attended movie of all time. I know different countries have different situations but it is always amazed me that South Korea could pull something like 16-17M admits/51M population (~31-33%). If that is case in Japan, it will be around 38-40M admits ...

In France, Titanic in 1998 made 22 millions admissions / 59M population (around 37%), it's insane. @Corpse, what do you think of this monday ? And how are holidays days in general ? The morning sessions are weak and the afternoon and evening shows are strong ?

Different markets have different priorities and movie going habits. Japan isn't a HUGE movie-going market like US. I don't even think China is as huge yet given their population. India is actually quite big movie going country but only for regional movies which are not even distributed to other regions within the country due to language barriers, plus the reporting structure is completely crap their to avoid taxes.

Holiday dailies usually act like Sundays. Stronger morning/afternoon showings, weaker evening/night showings.
And we really won't know if the announcement of it surpassing Spirited Away, and becoming #1 all-time will have any impact due to the holidays. I mean, it's likely going to have a 200/300% increase today over last Monday. Who knows what, if any, of such a huge percentage is from new casual moviegoers checking it out for that reason.
And while the Japan box office is the third largest in the world, much less of its population actually goes to the movies versus many other markets. The average moviegoer in Japan only sees 1.5 films a year. It's a big industry, again, third largest box office in the world, but it's smaller compared to many other sources of entertainment (such as the manga industry, for example) in the market.
